Our Approach
We don’t chase certifications for their own sake. The work below is what our chefs, bakers, and purchasing team already do — this page just puts a name to it.
01 — Minimize Upstream Waste
Menus are written around what farms actually have, not the other way around. Purchasing runs in tight cycles so product moves through the kitchen instead of sitting in it.
02 — Support a Local Food Economy
Our first farm partnership dates to 1997 and is now in its second generation. We pay producers fairly and keep them on the menu year after year.
03 — Thoughtful Menu Design
Heirloom grains milled in Doylestown become bread at High Street and pasta at Fork. Trim becomes stock, stock becomes sauce.
Our longest farming relationship. Glenn Brendle’s son Ian now supplies thoughtfully raised meats and seasonal produce from Lancaster County.
A cooperative of more than 100 certified organic family farms — vegetables, cheese, dairy, and grains.
