For nearly 30 years, we’ve believed that good food starts with thoughtful choices — about what we buy, who we buy from, how we use what comes through our kitchens, and what happens afterward.
Restaurants are part of a much larger food system, one that requires significant resources at every step, from growing and producing food to transporting, preparing, serving, and ultimately disposing of it. We know the choices we make within that system have an impact.

We don’t chase certifications. We focus on what matters: where our food comes from, how we use it, and how we can do better.
01 — Minimize Upstream Waste
We think about waste before an ingredient ever reaches the kitchen — purchasing thoughtfully, planning carefully, and finding value in what might otherwise be overlooked
02 — Support a Local Food Economy
Our first farm partnership dates to 1997 and is now in its second generation. We pay producers fairly and keep them on the menu year after year.
03 — Thoughtful Menu Design
Heirloom grains milled in Doylestown become bread at High Street and pasta at Fork. Trim becomes stock, stock becomes sauce.
Much of what anchors our menu comes from within a morning’s drive. These aren’t relationships built around a trend or a label. They’re partnerships that have grown alongside our restaurants and continue to shape the way we cook
Our longest farming relationship. Glenn Brendle's son Ian now supplies thoughtfully raised meats and seasonal produce from Lancaster County.
